Brown Bunny Cookies

Ingredients

 

1 egg

1 1/2 tsp instant coffee powder

3/4 tsp salt

1/2 tsp vanilla

2 1/2 c All-purpose flour

1/3 c EZ's BEST COCOA POWDER

1/4 tsp baking powder

1/4 tsp baking soda

1 c sugar

16 tbs butter

 

Method

 

1. Preheat oven to 350 degrees and line the baking sheets with wax paper. In a medium size bowl sift and whisk EZ's Best Cocoa Powder, flour, baking powder and baking soda. In a separate bowl whisk the eggs, coffee powder, salt, and vanilla together.

2. Process the granulated sugar with the butter until light and fluffy, add the egg mixture. Scrape the sides and continue mixing until the batter is smooth and paste like, then add the flour mixture. Mix until no more dry flour is visible.

3. Transfer the dough onto the counter and knead for 4 to 5 minutes or until smooth, then divide the dough into 2, covering and resting 1/2 of the dough in the freezer for 30 minutes.

4. Place the first dough in the middle of two large parchment and roll-out to 1/8 inch thick, cover and rest in the chiller for 15 minutes before cutting out the rabbit shaped cookies. place the cut outs over some granulated sugar before placing in the prepared baking sheet. Bake the cookies for 9 minutes and allow to cool down to set. Do the same for the second half of the dough.
