Velvety Rabbit Cake

Ingredients

 

2 c sugar

1 c EZ's BEST COCOA POWDER

1 3/4 c All-purpose flour

1 1/2 tsp baking soda

1 1/2 tsp baking powder

1 tsp salt

2 eggs

1/2 c vegetable oil

1 c buttermilk

3/4 c boiling water

 

Filling:

1 cup heavy cream

1 cup (Chopped) dark chocolate

 

Frosting:

150g  EZ’s Best Whipping Cream Powder

200g Cold Water

1/2 c cream cheese (softened)

1/8 c sugar

 

Food color:

pink, orange, purple, green

 

Method

 

1. Preheat the oven to 350 degrees Fahrenheit. Line the bottoms of two 9-inch round cake pans with parchment paper.

2. In a large size bowl, sift and whisk EZ's best cocoa powder along with all the other dry ingredients then set aside. And in a separate bowl whisk together all the wet ingredients including eggs, oil, buttermilk and hot water carefully to not cook the eggs. Then pour over the flour mixture, stir until well combined.

3. Divide mixture into two, transfer into the prepared baking pans and bake for 25 to 30 minutes or until an inserted toothpick comes out clean.

4. To prepare the filling and frosting, heat the cream to a simmer and pour onto the chopped chocolate and melt until smooth. Allow the ganache to set for 30 minutes or until consistency is thick enough to be spread onto the cake. For the frosting whisk and sprinkle the sugar into the cream cheese and then fold into the whipping cream.

5. To assemble the cake, using one of the two baked sponges cut out two bunny ears shaped pieces. Divide all pieces 1 round cake and 2 ears into 2 layers. Spread the ganache between the layers and position the 2 ears onto the round piece to form the bunny's head.

6. Using a pipping bag with a star tip, pipe the white frosting all over the head until it is fully covered creating hair like texture. You may also color your frosting to finish or garnish your bunny with pink ears and a flower crown. Chill your cake in the chiller for 15 minutes to set before enjoying with the whole family.
