EZ Mango-Kiwi Mini Pavlova


250 g egg whites

250 g sugar

250 g confectioner’s sugar

1/4 c cream cheese (softened)


1/2 c water

3 tbsp sugar

1 tsp vanilla

 **Assorted Fruits: fresh Blueberries, diced Mangoes, Kiwis and fresh peppermint leaves for garnish



  1. To make the meringue preheat the oven to 95 degrees. using an electric mixer whisk the egg whites at medium speed gradually adding the sugar and powdered sugar together. Continue mixing until meringue is shiny and creates stiff peaks.
  2. Scoop and shape the meringue into small mounds on a non-stick baking pan. using a spoon form a small indention in the middle. Bake for an hour after the first hour turn the oven off leaving the door open and allowing the meringue to dry and cool down inside.
  3. While waiting for the meringue to cool down whisk EZ's best whipping cream powder with a 1/2 cup ice cold water until stiff peaks form, add in the softened cream cheese along with the sugar and vanilla.
  4. To Assemble place a generous amount of cream in the center of the baked meringue, toss together your favorite fruits, a mix of cubed ripe mangoes and sliced kiwis garnished with some peppermint leaves will surely make your Mother’s Day Celebration special.
