Black Buns with Cheese Pimiento

BLACK BUNS
Ingredients
  • Bread Flour  1000g
  • Instant Yeast  8g
  • Bread Improver  4g
  • Ez's Best Anti-Amag Mold Inhibitor  3g
  • CATALINA Black & Bold Cocoa Powder  50g
  • Buttermilk Powder 30g
  • Water  520g
  • Sugar  140g
  • Salt 15g
  • Shortening 80g

 Instructions

Dough Development
  • Blend bread flour, Instant Yeast, EZ's Best Anti-amag, Bread Improver, Catalina Black & Bold and Buttermilk Powder.
  • Dissolve Sugar and Salt in Water
  • Mix dry and liquid ingredients.
  • Add Shortening after 2 minutes of mixing.
  • Partially develop dough

Fermentation

  • Time - 15 minutes

Dough Brake

  • 100% Dough Development

Make Up

  • Divide dough into 65 gram per piece.
  • Round and rest dough for 10 minutes

Final Proofing

  • Proof box Temperature ~ 31 - 37 Celsius
  • Relative humidity ~ 80 - 85%

Baking

  • Preheat box temperature 12 - 15 minutes until done.
  • Oven temperature ~ 180 Celsius

 

CHEESE PIMIENTO

Ingredients

  • 1/3 cup Mayonnaise
  • 1 tbsp. Cream Cheese (softened)
  • ½ tsp. Lemon Juice
  • ½ tsp. Worcestershire Sauce
  • 1/8 tsp. Cayenne Pepper
  • 1 cup Yellow Cheddar, sharp
  • 1/3 cup pimentos, patted dry and minced
  • 1/8 tsp. EZ's Best Potassium Sorbate
  • 1/4 tsp. Water

Instructions

  1. In a small bowl dissolve EZ' Best Potassium Sorbate in water then set aside.
  2. Then in a separate bowl whisk the softened cream cheese with the mayonnaise until homogenous.
  3. Add in the lemon juice, Worcestershire sauce. season with cayenne pepper and then add the shredded Yellow cheddar along with the minced pimento.
  4. Mix until well combined. make sure to keep in a sterilized and tight jar or container.
