Sans Rival Cake w/ Buttercream Frosting

SANS RIVAL

Ingredients

  • Cashew nuts, roasted, coarsely chopped 400 2 2/3 cups
  • Sugar, white refined 338 1 1/2 cup
  • Cornstarch, sifted 50 1/3cup + 1 tbsp

Preparation: Combine together and set aside.

Ingredients

  • EZ's Best Meringue Powder 75 3/4 cup
  • Water, cold 375 1 1/2 cup
  • Sugar, white refined 200 3/4 cup + 1/8

Preparation: 

  • In a mixing bowl, fitted with whisk attachment, dissolve and whip meringue powder in cold water to soft peak.
  • Add sugar gradually whipping to stiff peak.

For filling and topping

  • Buttercream Frosting 1 recipe
  • Cashew nuts, roasted 350 2 cups
  • coarsely chopped + 1/3 cup

Instructions

  1. Preheat the oven into 132 Celsius/ 270 Fahrenheit.
  2. Prepare sheet pan/tray, grease and lined with baking paper and dust with flour. Or use a silicone mat.
  3. Gently fold in the nuts mixture on to the whipped stiff meringue.
  4. Spread on greased and lined baking pan/tray or silicone mat about 4mm thick.
  5. Bake until golden brown for approximately 45 minutes to 1hour.
  6. Once done baking, peel off the paper or silicone mate, while still warm. Transfer to cooling rack.

 

BUTTERCREAM

 

Ingredients

  • Confectioner's Sugar, sifted 100 1 cup
  • EZ's Best Vanilla Powder 0.55 1/8 tsp

Preparation: Combine together and set aside.

  • Sugar, white refined 175.7 3/4 cup
  • Water, hot 118.55 1/2 cup
  • EZ's Best Meringue Powder 25 1/4 cup
  • Butter, unsalted, 450 2 cups
  • chilled and cubed

Preparation: 

  • Combine, stir until the sugar dissolves. Cool down.
  • Add to sugar mixture.

Instructions

  1. In a stand mixer bowl with whisk attachment, whip in medium speed the sugar syrup and meringue powder until soft peak forms.
  2. Gradually add the sugar vanilla mixture and whip at high speed for about 2 mins until stiff peak.
  3. Change whisk attachment to paddle then lower speed to medium, gradually add butter cubes. Butter should not be too cold or frozen, otherwise frosting will break or split.
  4. Beat for another 3-5 minutes until butter is fully absorbed. Buttercream consistency should be smooth and fluffy. Transfer to a clean container, cover until ready to use.

Cake Assembly

  1. Place the baked meringue on a cake board or plate.
  2. Spread buttercream frosting, sprinkle top w/ cashew nuts.
  3. Repeat this procedure until 3 layers of baked meringue.
  4. Frost the cake with buttercream. Sprinkle w/ cashew nuts.
  5. Decorate Sans Rival cake as desired.
